Over the past few weeks, it feels like I haven’t really done that much cooking! Life has been really busy and as a result, I just haven’t had as much time to play around with new recipes. But I’m finally back into the swing of things and I did some real grocery shopping this week so the kitchen is well stocked and I’m ready to get back to recipe-making!
I shared all about my favorite Halo Top flavors last Friday and it made me realize that I have a few new, new-to-me, or resurrected favorites that have been making their way into my shopping cart lately. Here are a few things you might want to pick up the next time you’re at the store!
Here’s what I’ve been loving lately!
I’ve been back on a yogurt kick. I normally just go with a plain 0% Greek yogurt (either Fage or Chobani, whichever is on sale) but lately I’ve been grabbing Siggi’s vanilla. This stuff is so thick and creamy. I generally don’t really enjoy yogurt unless I have it with frozen fruit, but this stuff I can eat plain and be happy. Low in sugar, high in protein. That’s my kind of yogurt.
I mentioned Pasta Lensi my What I Ate Wednesday , when I used it in this baked ziti recipe but I wanted to show you the box so it would be easier to find. I was pretty impressed with the flavor. This pasta is made of just chickpeas so it has a lot more protein and fiber than traditional pasta noodles. The texture reminded me of gluten free pasta, but the taste was more like a whole wheat noodle. It’s not an exact swap for pasta but if you’re craving pasta and you want something with a little more protein and fiber, this stuff is worth a try. Pasta Lensi also sent me their red lentil and black bean pastas so I’ll try those next!
My mother-in-law recommended these Flatout Flatbreads a few months ago and I’ve been hooked! (Thanks, Jana!) They’re simple flatbreads that serve as a perfect pizza base. I like to add a little bit of Rao’s tomato basil pasta sauce with a little mozzarella. Simple & delicious! If you like really thin crust pizzas, give this a try! It’s perfect for when you want to satisfy a pizza craving without ordering an entire pizza. Each flatbread is only 120 calories and I love that I can just keep them in the freezer until I need one.
Helloooo quick and easy dinner. I picked up this Masala Simmer Sauce from Trader Joe’s on a whim earlier this year and it’s a nice pantry staple to have on hand. I just boil some red lentils and stir in the sauce. That’s literally it. 2 ingredient dinner? Yes please.
I feel a little cliche mentioning kale chips… but seriously these are really good. And each serving (there are 2 servings per bag) has 6g of protein! While I love pretzels, I could eat an entire bag because they basically fill me up as much as air. I’ve also been enjoying Brad’s kale chips, but I like that Rhythm Foods has them in smaller portions. I also like making kale chips but I haven’t found a way to keep them crunchy for more than a day. Any tips? For now, I’ll just snag a bag of these when I need a crunchy fix.
