You know I love healthy foods and if you’ve been reading my blog for a little while, you can probably tell that I’m not a fan of complicated recipes. I know that most people are busy and don’t have 2 hours to spend chopping vegetables, finding specialty ingredients, and buying 10 new spices for a fancy sauce. Most of us come home from work and we’re hungry! We just want to grab something quick, easy, and delicious. So while I love to cook, I definitely love having healthy pre-made options. Sometimes I go for a freezer meal or sometimes I grab a salad kit. The problem with most salad kits is they’re kind of… lame. It’s just a bunch of lettuce with a few carrots and maybe some croutons. Luckily, the bagged salad game has been getting better and I’m loving these Eat Smart Gourmet Vegetable Salad Kits!

This is perfect for busy people who still want convenient and healthy eating options. Right away, I was dying to try the Southwest salad. I love salads with a lot of crunch!

southwest salad kitThis one came with corn and crunchy tortilla chips for topping! The dressing was nice and spicy and the salad mix had everything from radishes to cabbage! Definitely a fun combination!

The star of the show though, in my opinion, was the sweet kale salad. You all know how much I love kale!

I loooooove that this bag wasn’t just full of kale stems. (If you’ve ever bought pre-packaged kale, you know what I mean!) The Eat Smart Sweet Kale Salad Kit had so many great textures and was full of seven different superfoods: kale, green cabbage, broccoli, Brussels sprouts, chicory, roasted pumpkin seeds and dried cranberries, plus a poppy seed dressing.

The poppyseed dressing that somewhere between a vinaigrette and a creamy dressing. Thick enough to stand up next to kale but not so thick that it was hard to mix. Honestly, this salad was pretty filling all by itself but I decided to add a few extras to turn this into a full entree!

Poppyseed Kale Salad with Roasted Potatoes

Ingredients

Scale
  • 1 bag of the Sweet Kale Eat Smart Gourmet Salad Kit
  • 4 small red potatoes
  • 1 tsp olive oil
  • Pinch of sea salt
  • 1/2 cup canned cannellini beans, rinsed
  • 2 tbsp sliced almonds

Instructions

  1. Preheat the oven to 400.
  2. Slice the red potatoes into 1/2″ pieces.
  3. Toss the potatoes with olive oil and sea salt and spread in a single layer on a baking sheet.
  4. Bake for 35 minutes, turning once halfway through, until brown on both sides.
  5. Let cool slightly.
  6. Toss with the rinsed cannellini beans.
  7. Prepare the kale salad it according to the package.
  8. Add the potatoes and cannellini beans on top & serve!

This was the perfect filling dinner! I loved it!
