Not only is it a fun word to say (I believe it’s pronounced “Keen-Wah”) it’s also a complete source of amino acids!
So I had this yummy quinoa dish from work yesterday. (Sorry the picture is a little blurry.) Definitely worth recreating.
Here’s what I came up with:
Quinoa Cranberry Salad
- 1 cup quinoa (uncooked)
- 2 cups vegetable broth
- 1 tbsp olive oil
- 2 tbsp dried cranberries
- 2 tbsp sliced almonds
- handful of fresh cilantro, roughly chopped
- Squeeze of lemon juice
- Salt to taste
Cook the quinoa according to the package (but use the veggie broth instead of just water), then add in the olive oil, cilantro, lemon juice and salt. Let cool, and stir in cranberries and almonds. Super simple, super tasty! I love quinoa!
Have you ever tried quinoa? If you like rice, you’ll probably like it. Similar texture, but it has a slightly nutty taste.
Now if only I could find a similar recipe for these amazing sweet potato soup I had at Zeus’s Cafe on Friday…
Tomorrow morning, I think I’m going to try a bowl of oats, since I’ve only tried oatmeal once and it was gross instant stuff. Any recommendations?
