Description
This spicy whipped ricotta only takes a few minutes to make and this creamy spread is delicious on a toasted baguette or your favorite crackers!
Ingredients

- 1 cup whole milk ricotta cheese
- 1 tablespoon olive oil (plus more for drizzling)
- Salt to taste
- 1/2 teaspoon crushed red pepper flakes (optional)
- Bread or crackers for serving
Instructions
- In a stand mixer or food processor, blend the ricotta and olive oil for 5-6 minutes until it becomes fluffy and creamy.
- Add salt to taste and mix until combined.
- Transfer to a bowl and sprinkle with red pepper flakes, if using.
- Drizzle with olive oil just before serving.
- Serve with toasted bread or crackers
Notes
I found that a whisk attachment on a stand mixer was the easiest way to get this ricotta to be super light and fluffy but if you don’t have one, a hand mixer or a food processor can do the trick.
