I love snacking on almonds, but after a few, it can get a little boring. I love the idea of infusing flavor into almonds by roasting them. Since I loved the flavor of rosemary in this rosemary parmesan popcorn recipe, I decided to try it with almonds, next! It worked beautifully.

I don’t love plain almonds, but once they were roasted with a little salt and rosemary, I couldn’t stop snacking on them! They’re simple but delicious.

How to Roast Almonds

In order to roast the almonds, you’ll need to toss them in a bit of oil. I used olive oil for a little savory flavor, but you can use vegetable oil or avocado oil if you prefer. After tossing them with the oil and salt, spread them onto a baking sheet in an even layer.

Sprinkle the almonds with the chopped rosemary and bake for about 10 minutes until the almonds are a deep brown color. You can see the difference in color, in the photo below.

Tips & Tricks

  • Experiment with different seasonings to create unique flavors. Some popular options include rosemary, paprika, or a touch of cayenne for a spicy kick.
  • If you’re roasting sliced almonds, they brown faster than whole almonds, so keep a close eye on them. You’ll need to significantly reduce the roasting time.
  • Make sure the almonds are not crowded on the baking sheet. Overcrowding can lead to uneven roasting.
  • Roasting times may vary based on your oven, so it’s a good idea to start checking for doneness a couple of minutes before the minimum suggested time.

Ingredients

  • 2 cups raw almonds
  • 2 teaspoons oil (I used olive oil)
  • 1/4 teaspoon salt
  • 2 sprigs of fresh rosemary

Instructions

  1. Preheat the oven to 350 degrees.
  2. Toss the almonds in the oil and salt to coat.
  3. Finely chop the rosemary and then sprinkle the almonds and toss to coat.
  4. Spread on a baking sheet and roast for about 10 minutes or until they just begin to brown.

These made the kitchen smell so amazing, it was worth heating up the oven on a hot afternoon. I packed some up in a mason jar and put them in my purse for snacking all weekend. Goodbye, boring almonds.
