I absolutely love this time of year. Thanksgiving is just week and a half away, the weather is perfect, and the holidays are on their way! Christmas may be my favorite holiday, but Thanksgiving is like the gateway holiday, and at that point people aren’t sick of Christmas music yet… so Thanksgiving is pretty awesome. Besides, a whole day centered around delicious food? How can I complain about that?

Obviously a lot of people are into the whole turkey-thing but for those of us that are celebrating without meat, here are a few of my favorite fall-friendly recipes which might be able to steal a spot on your table. These recipes will please both vegetarians and non-vegetarians, so you could make few to please a crowd.

pesto stuffed mushrooms

Ok, this recipe is coming from someone who doesn’t really like mushrooms. But even though I don’t really like the little fungi, I really liked these stuffed mushrooms. This recipe proves my theory that pesto makes anything delicious.

The best part about this recipe is that you could easily toss in remnants of vegetables here, so if you have leftover peppers, onions, tomatoes, or other vegetable scraps, you can add them into this spaghetti squash bake! It’s also pretty healthy, and it’s always nice to have a dish that’s a little bit lighter on the table.

Ok, there are a lot of ways I enjoy zucchini (pizza boats, lasagna) but these roasted zucchini fries are my all time favorite. They’re slightly crispy, salty, garlicky, and delicious. Oh, and they’re mostly just vegetables, so they still count as healthy. Quick, go grab a zucchini and try it! It’ll change your life. Or at least your opinion of zucchini.

Lastly, while dessert is almost always vegetarian friendly, I have to share this dessert recipe because I almost always find double chocolate chip cookies in the freezer when I’m home for the holidays. Obviously fresh from the oven cookies are the best thing in the world, but if you’re not having them warm, try them frozen. It may sound crazy, but it makes the cookies super fudge-y and amazing.
