Tuesday’s Eats
There’s something kind of odd about cataloging your eats for the day. If you’ve ever kept a food journal, you know that just being aware of what you eat, often causes you to make better choices. It’s strange, but it tends to work. It’s probably also a little strange that I find it fascinating to see what others are eating. It gives me inspiration and recipe ideas, and often, it motivates me to try something new.
I’ve been doing these posts for awhile now and hopefully today’s post, strange though it may be for some of you, will encourage and inspire you to eat more fruits and veggies! Here’s a little “What I Ate Tuesday“.
Breakfast
I rolled out of bed at 5:30am to go to spin class (read all about that here) and although I wasn’t hungry, I managed to eat half an apple to give me a little fuel during the class. Once I got home, I had the other half of the apple, plus a couple of slices of toast and a mug of coffee. If you haven’t tried Food For Life Bread before, check it out. It’s delicious and super good for you. Peanut butter just wasn’t sounding great (who am I?) so I just spread a little butter on top.
Lunch
I was able to get lunch with my brother, which was so fun. I love that we work at the same company, so we can squeeze in lunch dates every now and then. I had a sandwich from Which-Wich, which was a lettuce wrap filled with hummus, feta, tomatoes, cucumbers, and red peppers. It was awesome. I love their lettuce wraps! Veggies inside a veggie? Win-win.
In the afternoon, I had half of a Thin Thin bar, and when I got home, I had another slice of toast. We weren’t eating until later and I was so hungry when I walked in the door, I knew I needed something to tide me over! Of course, I saved room for dinner…
Dinner
My roommates and I decided to have a little dinner date at Mellow Mushroom. We shared some spinach dip, and then Rachel and I split this Kosmic Karma pizza. We got a small and still took half home, because it was so filling! One piece was all I could handle, (probably due to that spinach dip…) but it was SO good! Feta + Pesto = delicious.
Despite eating both lunch and dinner at restaurants, I felt pretty good about the day. I definitely worked up an appetite and spin class, but I also didn’t totally stuff myself with pizza. Balance, that’s what we’re after here, right?
I’m resharing this fun dessert recipe for Black Bottom Cheesecake Cupcakes today in honor of Valentine’s Day coming up next week. My mom used to make these all the time when I was growing up and until a few years ago, I hadn’t thought about them in a long time. I came across the recipe, which my Mimi used to call Girdle Snappers, in a recipe box and decided to make them. They were just as good as I remembered.
