Easy Greek Salad Dressing

It’s kind of nice to be back home and back in the swing of things. While it was fun trying so many new restaurants, I love being back in the kitchen. Since vacation was lots and lots of heavy (and not always healthy) food, I’m trying to keep things light around here. After we got home on Monday, I picked up my Relay Foods order and put together a pretty simple dinner. I’m obsessed with Feta cheese, so I love Greek salads, and they’re the perfect pair with a little bit of Bombolini spaghetti. We each had a giant salad, with a side of black pepper pasta.

I’m not generally a huge fan of salad dressings. Most of them feel too heavy to me. Plus, have you read the ingredients lists on those store bought dressings? Some of them can be kind of scary. Often times I just use balsamic vinegar which gets the job done, but I wanted to whip up something a little more complex for this salad. Don’t worry, it’s still super easy.

  •    1/3 cup olive oil
  •    1/4 cup balsamic vinegar
  •    1/4 tsp dried oregano
  •    1/4 tsp dried parsley
  •    1/4 tsp salt
  •    Dash of garlic

I just added it all to a bottle and shook things up. I told you it was easy! For the salads, I just tossed together romaine, red onions, cucumbers, tomatoes, and feta. Drizzled with a little dressing, it came together pretty easily. I could probably eat this over and over.

It’s always nice to have an easy salad dressing recipe on hand, for those nights when you need an emergency dressing. I’m also pretty sure this would be delicious on a pita wrap… hmm

  1. I love making my own salad dressings too. I usually make a mini one to take with me when I have salads for lunch. The dressing usually consists of Nutritional Yeast, Apple Cider Vinegar, Stevia, Dijon Mustard, Salt, Pepper and some water, so so good! <3

  2. I LOVE greek salads — it’s the beets that do it for me. Mmm. I always buy my dressing, which is silly when it’s this easy.

  3. I am so lame and really only use vinegar on my salads. I love balsamic based dressings though!

    • It was actually a party favor from a wedding I went to a few months ago! They filled them with M&Ms but I thought it was so cute I had to save it!

  8. I love to make my own salad dressings! They always taste better knowing I made them.. and knowing exactly what I put in them! This salad dressing looks great! I’ll have to give it a try!

  9. I don’t really have a favorite. I rarely use dressing for the negative things you listed above although I do sometimes get the spicy Skinnylicious dressing at The Cheesecake Factory. Oh and I like ginger dressing at Japanese Restaurants.

  12. I make a similar one! I usually use olive oil and balsamic because I am lazy but a little boutique store near my house makes the best pure ingredient dressings. I pick one up every time I go over to that neighborhood.

    • Ohhh yum! I noticed a few Olive Oil places while we were in San Francisco! I was trying to convince Alex to do a tasting with me but he wasn’t convinced 😉

  15. Yummm!!! This seems so simple and delicious!! I’ve also heard that you can add a squeeze of lemon for a little bit of a tang too. Do you get a CSA basket/refill basket from Relay Foods?? They just came to Fredericksburg, so I’m excited to join in. I was literally stalking their website today! haha.

  17. I cannot even begin to tell you how many times I’ve made this dressing – if not the same, similar. So good. I usually stick to hummus for my salad dressing actually.

  18. I’m definitely feta cheese obsessed too!! I love topping salads with greek yogurt and salsa, but when I want something lighter, I love balsamic and olive oil. So your dressing sounds like it is perfect for me!

  23. My favorite salad dressing is Italian, though I can never find on in the grocery store that I like. I like it at restaurants, but I always have to be careful since I don’t always know what’s in it (and I have to avoid milk). It can be a pain, but hopefully I’ll find a recipe I like that I can make at home. This one sounds delicious. 🙂

  28. I love the name of your blog!! This seems like a yummy dressing although I would probably choose lemon instead of the vinegar because the citrus flavour reminds me of eating seafood by the Mediterrane. I love easy, tasty dressings like this one. 🙂

  31. Hmmmm well because I live in a household surrounded by men, the answer to that would be RANCH! I actually like to mix some olive oil and balsamic vinegar for myself but they won’t eat it – their pallets aren’t sophisticated enough 😉 Going to pin this recipe, found you at D&D!
