Easy Vegetarian Cookout Recipes

If you’re here in the states, you’re probably planning some 4th of July activities! I’m currently in Minnesota, spending the week with Alex’s family. I’m still working for most of the week, but the change of scenery has been nice. The 80 degree temperature and sunny skies certainly make it more enjoyable! I’ve had such a great time meeting his friends and family, and the rest of the week is pretty packed with activities.ย I’m sure you understand… soย just in case you’re scrambling for a few last minute ideas for a party or barbecue, check out these cookout recipes!

Tip: If you want cook your burgers on the grill, make sure you use non-stick spray on the grill and try freezing them for a bit first. It sounds weird, but it will help the burgers stay together a little better while you’re toasting them. They also work in the oven or in a skillet!

Tip: For kale salads, add the dressing ahead of time to let the leaves soften. For traditional salads (like romaine, iceburg, etc) wait until you arrive to add the dressing, or serve on the side!

Tip: Keep desserts in the freezer just before serving. Even the cookies will be delicious chilled, and will prevent them from getting too soft during transportation!

There’s a really yummy cypriot salad that is made by one of my favourite chefs in Australia, it is made with Freekah (cracked wheat), Lentils, Coriander (Cilantro as you would say), Capers, Toasted pumpkin seeds and more and is delicious.   5. I love bringing black bean brownies and not telling people about the secret ingredient! After all the oohs and ahhs, I tell them what’s inside. Gets em’ every time!!

  9. The lemon kale salad sounds fantastic. I like the tip to add the dressing early for kale salads to help let the leaves soften. I love cold cookies too, I think they are much better when hot out of the oven or chilled.

    Speaking of oats, I might make those chocolate oatmeal bites for a party this weekend! I usually like to prepare my pesto if I’m going to a potluck, but I’m switching it up the next few weekends and going with a chickpea-avocado salad. Yum!

  13. The salad looks wonderful, Liz! I don’t remember the cauliflower tabbouleh recipe, but I like both your version and Brittany’s…need to try them both! It always amuses me when I go to someone’s barbecue and I take veggie burgers with me. No one Ever knows what to do with them. I then have to explain that basically they’re just warming them up…they’re not really going to change much as they cook. Educating meatasauruses is Fun!! Happy Independence Day!
