Lighter Banana Bread

I finally purchased a juicer, after wanting one ever since talking to Shannon about the wonders of juicing. I’m kind of a sucker for kitchen appliances, so it’s sort of surprising that it took me this long to get one. Since I have a VitaMix (best appliance ever) I went with a fairly cheap juicer. I’ll still use my blender for most things, but it’s nice to have the option to juice, particularly when I have produce on the edge of going bad.

I’ve tried a few combinations so far, and here’s my favorite:

  •     4 handfuls kale
  •     1 large carrot
  •     1 green apple
  •     1 kiwi
  •     1 handful green grapes

I’ve been having juice in place of my usual morning snack, and I swear it’s giving more energy than my coffee! I can’t wait to try more combinations. This week has been so busy, I haven’t had a chance to get to the grocery store to stock up on more fruits and vegetables. I’m hoping to get lots of fresh produce at the farmers market.

I also baked a loaf of banana bread on Tuesday. I used this recipe from Cooking Light, but I made a few substitutions to get a little more protein and fiber in there!

Lighter Banana Bread

  • Lighter Banana Bread
  • Adapted from this Cooking Light recipe
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • ¼ cup butter, softened
  • 2 large eggs
  • 4 small mashed bananas
  • ⅓ cup 0% plain greek yogurt
  • 1 teaspoon vanilla extract
  • ½ cup walnuts
  • Cooking spray
  1. Preheat the oven to 350.
  2. Combine flour, baking soda, salt, and sugar. Whisk together.
  3. In a separate bowl, beat the butter with the eggs until combined.
  4. Mash in bananas.
  5. Add yogurt and vanilla.
  6. Combine with the dry ingredients.
  7. Stir in walnuts.
  8. Pour batter into an 8½ x 4½-inch loaf pan coated with cooking spray.
  9. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean.
  10. Cool 10 minutes in pan.
  11. Try to stop yourself from eating it straight from the pan.

This banana bread was so yummy, I had to resist eating the whole loaf straight from the pan!

  1. I have a juicer….but rarely use it because of the mess. But I love juicing carrots. I still have yet to try kale in juice or smoothies.

    • It’s definitely a bit of a mess, but as long as my veggies are washed ahead of time, it doesn’t take TOO long!

  2. I keep thinking about a juicer, but as I have no room at the moment that will probably wait until I get to New Mexico. I keep hearing about so many different ones. Many are SO expensive. How do you like this one. Need to look it up on Amazon! Looking forward to more juicy combos!

  4. Oh, my very favorite quick bread (although if there is a cinnamon quick bread that I don’t know about it, that would win :)! Nice idea to throw the walnuts and whole wheat flour in there. Not sure I have any new juice ideas- just have a blender, myself- but yours sounds delicious!

  5. The name of that juicer is hilarious to me! I don’t know much about juicing, but I’m going to look more into it. It’s just sucks that I can’t use raw kale or spinach as they’re goitrogenic 🙁

  6. Juicing is fab! i’m really into it at the moment, although cleaning teh juicer can be a pain.

  7. My favorite juice combo is Cantaloupe + Cucumber (half a cantaloupe, 1 cucumber) it’s like dessert! Another one I like is green lemonade – apples, kale/spinach, and lemon! I really need to do more juicing – I haven’t had one in a long while!

  8. I bet I could send you some ideas. I have the Nutribullet cookbook which has lots of recipes! I would try throwing in some nuts, seeds, etc. to really give it an extra boost. I 100% believe it probably boosts your energy better than coffee!

  11. The key to juicing success is to do it with a buddy! My husband makes juice, I do the clean up. It really makes it a million times more manageable. Gotta juice items Kale, Ginger, Apples, Beet Greens, Citrus.

  12. I’ve been wanting to buy a juicer for awhile now, but just can’t seem to justify spending too much money on it. YET I will spend 8 dollars on a juice from the local vegan restaurant – hmm! I love beets in my juice 🙂

    • Haha you should check out the one I got! It was only $50! Not bad, and cheaper than buying lots at Whole Foods!

  18. I’m just using a cheap old blender, so I don’t know if it counts as “juice,” but greens, banana and ginger are just impossible to beat in terms of taste. Okay, as long as ginger goes into juice? It’s good stuff.

  20. My mom gave me a juicer in March and I used it a TON at first; however, this post made me realize that I haven’t used it in (at least) a month or so. I think I’ll go and get some vegetables tomorrow and bring the juicer up from the basement 🙂 My favorite kind of juice is carrot juice with ginger, carrots, and lemon (just like Northstar!)

  21. One of my favourite Juices is Apple/Carrot/Celery and Ginger it has a zing to it from the ginger but is really delicious.

  25. Oooh, can you do a product review on your juice eventually? I really want a new one (because mine’s from the 70s), but I certainly don’t want to spend too much and I keep reading bad things on Amazon reviews.
    As far as juicing recipes, I’ll drink just about anything as long as it has half a lime in it. I haven’t been too adventurous as far as adding herbs, but I hear those are great. Enjoy juicing!
