Food Highlights of the Week

Despite battling the plague for most of the week, I did have a few good meals along the way. So instead of showing you one day of eats, I’m going to just show you my favorites from the week. It’s love your veggies month, so it’s basically a month created for me. Sadly, I didn’t squeeze in any vegetables at breakfast (epic fail…) but I worked them into some other meals!

Breakfast

Sunday morning, I was still dying of a cough, but Alex and I made chocolate chip pancakes. Nothing better for a cold, right? ;)

We made these whole wheat pancakes, which I can’t pretend were healthy, but they sure were tasty. Recipe courtesy of the Betty Crocker cookbook. I was feeling old school. This was eaten with multiple cups of coffee and cold medicine.

Lunch

This isn’t a huge highlight, but I did have someĀ lentil soup. It’s been chilly and rainy, so this soup really hit the spot, especially since I wasn’t feeling so great. I enjoyed this with a side of carrots and hummus, just to pack in a few more veggies.

Lentil soup is one of my favorite things. It’s so filling and so easy to make. Not to mention cheap. And I love cheap. Click the photo for the recipe.

Dinner

On Valentine’s Day, Alex and I made this Butternut Squash Macaroni and Cheese type of dish. Oh my goodness, this was delicious. It also wasn’t super difficult to make. I’d highly recommend you check out Jessica’s recipe.

The picture doesn’t do it justice, but it was quite good. Trust me.

Oh and I also made these double chocolate chip cookies… but you’ll have to stay tuned for the recipe.

Yes that’s sea salt on top. And yes that’s a cashew peeking out. But seriously… come back Friday for the recipe.

  1. I’ve also been trying to get more veggies in at breakfast with no luck! If I’m good I’ll make a smoothie with a cup of spinach, but that’s about as far as it goes (I always have oatmeal). I figured I eat enough throughout the rest of the day so I’m not that worried about it.

    • On the Tone It Up plan I was doing egg white scrambles with tomato and spinach but that’s about it! I eat a lot throughout the day as well, so I figure it’s fine! ;)

  2. That butternut squash mac and cheese looks AMAZING! I have a huge squash that I need something to do with. I don’t know how I am going to cut it, but I sure I can see if my neighbor will let me use his chainsaw. I hope you are feeling better!

  3. Mmmmm all looks amazing! Especially those pancakes ;) I was in suuuuch a pancake kick last year (haha) and can’t even remember when I made them last now..

  5. I made my own version of butternut squash mac and cheese once for my boyfriend and it blew his mind haha and in my mind, any healthy recipe that gets approved by a guy is a keeper :D

  9. Awesome stuff! I really MUST start attempting to bake. I’ve had a horrible history of trying…but…if I want Vegan treats I guess I will have to do it myself, eh!? LOL Hope you continue to feel better!

  10. Butternut squash mac n’ cheese – yum!!!!!! I think the best thing I’ve eaten this week would have to be the zucchini & turkey “lasagna” that I made Sunday, loved it.

  12. You better believe I’ll be back Friday for the recipe. I’m the same way with soup. I have seriously been eating more soup in the past month then my entire life due to how cold it is. I cheat though and use the walmart lentils. :-)

  13. LOOK AT THAT SEA SALT! And, yes, I need to try that butternut squash mac & cheese…I have baby skillets that would be perfect for single servings ;) The best thing I’ve eaten this week is the TJ’s vanilla bean Greek yogurt I just had for breakfast! I get to Trader Joe’s once every 2 months and I just went this weekend. That yogurt is my FAVORITE!

  14. Love the look of that sea salt on those cookies. I thought the chocolate and salt combo was crazy before I tried it, but after I did, I’m a complete convert. And I’d have to say that the best thing I ate this week was definitely homemade cinnamon buns. Yay for conquering a fear of working with yeast!

  22. Okay, on a serious note..everything on this day of eats looks AMAZING! Chocolate chip pancakes are my favorite, I LOVE lentils, and butternut squash mac & cheese is a great healthy alternative to mac & cheese. Next time, invite me over please ;)!

  23. I’m feeling crappy today and, oh man, that lentil soup is calling my name. If only it would cook itself…. and then clean up the kitchen afterwards…. and maybe put my kids to bed too…. :)

  26. MmMMmm! That Lentil soup looks pretty good! I have A LOT of brown and red lentils home so I think could be a good way to start using some:-)

  30. I don’t know why I’m not a pancake girl. Seriously, they look so good, but I never seem to want such things for breakfast…

    I can get down on the multiple cups of coffee though. Perhaps with one of those cookies dunked into it?
