Another week of food journaling, and I finally have a few new things to share. I made a conscious effort to break out of my routine a bit, so hopefully it’ll keep things interesting.
In case you’re new to the blog I don’t normally do a lot of “calorie counting” posts, but food journaling is part of the Get Well Challenge, and since I’m adding it up anyway, I thought it would be fun to share!
I’m really guilty of the eat-it-everyday-until-I’m-sick-of-it thing, so in order to attempt to prevent that, I mixed in some old favorites with my eats today.

Breakfast
Instead of my usual smoothie, I whipped up this super easy breakfast:
6oz plain chobani, 1/2 scoop about time whey protein powder, 1/2 cup blueberries, 1 piece of Ezekiel cinnamon raisin bread. I also had an apple later in the morning.
Total: 380 calories, 35g protein, 10g fiber
Lunch:
Trader Joe’s Black Bean and Corn enchilada (these are vegan and gluten free!) plus an unpictured string cheese.
Total: 310 calories, 14g protein, 4g fiber
Afternoon snack:
Sabra hummus + pretzels Total: 260 calories, 3g fiber 6g protein. No picture, sadly. But these things are delicious.
Dinner:
As soon as I got home from work, I sprinted out the door for a quick run. When I got back I munched on a few cherry tomatoes while I waited for Brett and Lindsay to come over, so we could cook up a feast.
I skipped a tortilla and loaded my plate up with peppers, onion, and black beans. I topped off with some salsa, and eaten with a few several handfuls of chips on the side. After dinner, Lindsay and I took a walk around Carytown and inevitably ended at Sweet Frog. I went with a cake batter + cookies and cream swirl, topped with fruit and granola. It’s truly the best.
Total: 620 calories, 16g protein, 14g fiber.
Workout
I ran a 3 mile loop near by, and stopped at the gym during the halfway point to do some upper body. Nothing too exciting, but I managed to squeeze some physical activity in the day! I think I probably burned around 350 calories.
Total calories for the day: 1,580 calories, 72g protein. 32g fiber. Who says vegetarians don’t get enough protein?






When I know I will be out for lunch I make up a wrap or pita and bring that with an apple for lunch. It’s fairly quick, easy to eat and I can cover most food groups!

Yum eats, Liz, especially braekfast and dessert! Lately quinoa bowls have been my go-to lunch: leftover quinoa with whatever veggies I have at home, some kind of protein (usually boiled egg whites), chickpeas, feta and mixed with balsamic…perfect!
Ohhh yum! That sounds awesome! I’ll have to remember that next time I’m trying to throw something together quickly!
I’m still so boring when it comes to lunch- have probably been doing the same thing for 2-3 years now… salad that I prep all at once at the beginning of the week for 3 days… leftovers of some sort for another… and probably a deli sandwich for the other day. Boring. :p

I used to eat the Ezekiel cinnamon raisin bread all the time, but then I grew sick of it. I haven’t had it in over three years and completely forgot about it. I might have to buy some again!

All of your meals sound delicious. My favorite thing to pack for lunch is leftovers. Ha! Seriously though, there is nothing better than knowing you have a ready to go meal waiting for you in the fridge.

I’d seen it on so many blogs I had to try it. It’s really good! I love the cinnamon raisin, and it’s only 80 calories a slice, and not made with weird ingredients. I’d definitely give it a try! the downside is, it’s a little on the pricy side!

I have heard SO MANY good things about TJs prepared enchiladas but I’m afraid to try them at the risk of becoming addicted to them! Recently, my go-to easy to pack lunch has been a hummus wrap filled with veggies.

Great eats sweetie! I started writing a food and exercise journal yesterday in an attempt to achieve optimal health after having my baby. It’s all too easy to try a crazy post pregnancy diet but i really don’t want to go down that road. Health and balance rule
I am always looking for more ways to get protein in, but never thought of putting protein powder in my yogurt-definitely stealing that idea!
It’s PERFECT for greek yogurt, because it makes it a little bit sweet! It’s also delicious with peanut flour
Oh yeah vegetarian protein! Love it. And definitely looking for those enchiladas the next time I’m at TJs. 14g of protein? Count me in. And I absolutely love packing stews for lunch–they are good hot or cold, pack tons of nutrients/veggies in a small space, and only require carrying one small-ish tupperware container.

Are those enchiladas Amy’s knock offs? If so, you just gave me another reason to be jealous of everyone who has TJ’s. And my go-to packed lunch is ALWAYS salads as long as I have both a fun protein AND crunchy lettuce.
I’ve never had Amy’s but they totally could be! All I know is, they’re tasty, and they make an easy packed lunch
Wow. Great job with the protein! I hate when I see vegetarians only eating a few dozen grams a day. There are so many wonderful protein sources out there, and you are definitely picking some great ones… How do you feel about your food journaling so far? Are you getting tired of it, or do you think that it is really helping?
It’s super easy to actually do (I use the Daily Plate from Livestrong) and I honestly does make me WAY more aware of my snacking and the trade-offfs I could be making. (3 handfuls of cereal are way less satisfying than an apple with some peanut butter, but a similar in calories, you know?)
I do think it’s helping! I guess we’ll see by the end of the challenge
Ain’t that the truth. You don’t need meat to get your protein, that’s for sure. Great day of eats; thanks for sharing. My grocery store makes these fresh to go prepared lunches so I always grab a handful for the work week. This week I have an asparagus quiche, vegan squash risotto, stuffed pumpkin and cheese enchiladas with rice.

great post! I started writing a food and fitness journal a few days ago, to get me back to full health after pregnancy and childbirth. At one time, I would’ve researched a quick fix diet but not nowadays. I say, “Eat healthy to be happy, exercise often and you will get a body to be proud of”
Wait wait wait, let me get this straight. You went to sweetfrog WITHOUT ME!?!!? Ooohhh girl you better be ready to go Saturday as well or there’s going to be some hurt. The fact that you made breakfast (simple as you claim) is astounding. When do you wake up and when do you head to work? I feel myself rushing to get ready and out the door in the morning. Breakfast? I call that a mint and a coffee.
Hah I take forever eating breakfast. I could sleep in for a solid half hour I skipped my reading-the-paper routine.

First off, you take such good pics of your food! your blog looks awesome. I love all the TJ’s frozen meals..their spinach lasagna is one of my fav’s!
Since my work buys us our lunch, I know I am lucky, I always go for salads w/ chicken and load it up with some of my own toppings for home…I LOVE arugula in a salad and can’t get enough, plus crushed red pepper. Since I need to increase cals, I love oil based dressings.. really makes food so much more satisfying.

Everything looks really good!! I love the hummus/pretzel packs. I mean, combine two of the most delicious/addicting foods and it’s bound to be good. Thank goodness they make those single serving packs!!
Does PB&J count??? I think my favorite easy lunch is a veggie burger (dr praegers is my fave) with leftover sweet potato and brown rice!
Yeahhh girl! Look at that protein! It’s kinda fun to look at the numbers every once in a while, isn’t it? Those Mexi dishes made me want beans n chips so bad, so delish!

When I’m journaling for WW, I’ve started to track my protein, too. I started it at the beginning of the year and it really keeps me aware that I need to be adding that in.
I’ve actually never tried hummus with pretzels! How do you like it compared to carrots or other dippers for hummus????
