Hello from Dallas!
Eric and I drove the 1,200 miles from Virginia to Texas on Saturday. We left at 5am and arrived around 2am. Our plan was to stop in Memphis, but we were making such good time, we decided to just power through. It was nice not having to wake up and drive more on Sunday. We got most of his stuff moved in and unpacked during the day on Saturday, which was awesome.
After we made progress packing, we walked over to Cafe Brazil for brunch. I had some amazing veggie tacos, which were packed with veggies and egg whites, and a little feta cheese. They were served with rosemary potatoes, which I had a couple of. I don’t know why I’ve never though of the veggies + egg white combo for tacos, but I think I’m going to have to recreate this at home. And the feta cheese just took it to a new level of awesome. I’ve been obsessed with feta lately.
Once we were fully unpacked, we went to Kroger and picked up some ingredients for dinner. Eric asked what I wanted, and I love his stir fry, so that was my request. I was in charge of veggie chopping and Eric did the rest. It’s simple, but I could seriously eat this dinner over and over.
Simple Stir Fry
- 3 large carrots
- 1 zucchini
- 1 yellow squash
- 1 white onion
- 1 red bell pepper
- 1 orange bell pepper
- 1/4 cup fresh cilantro
- 2 tsp salt
- 3 eggs
- 1/2 cup brown rice
- 1 cup of water
- olive oil
Eric browned the rice in a bit of olive oil (just cook over medium heat until the rice sizzles and browns a bit) and then added 1 cup of water and simmered until all the water was absorbed. I chopped the veggies, and sauteed them in a bit of olive oil in a giant wok pan, over medium heat. Once the rice was cooked, he added the rice to the veggies, turned the heat on high, and added the eggs. Cook on high until the eggs are fully cooked. Add cilantro and salt. Serve.
Eric added fish to his, but obviously, I kept mine with just veggies.

I could seriously eat this every day and be happy.
I’m loving Dallas, and Richmond prepared me well for the heat, so I’m glad I get to spend a few days here. If I didn’t love Richmond so much, I think I’d have to consider moving to Dallas.




Mmmm stir fry!! I love just tossing in random veggies along with an egg and quinoa. A little sea salt and pepper and Im good to go!

Dang what a drive! That’s awesome you were in the Big D though and got some nomtastic food!
Oooo! I’m going to have to try that stir fry out, looks wonderful! I always prefer having one long drive and getting it out of the way rather than taking a break. We go to Alabama every year, a whoppin’ 16 hour drive, and usually start at night and make it there the next afternoon. So much better than wasting two days on driving.
I use cabbage or broccoli slaw as my base — makes more volume and I get to eat more for the same cals..win!
I could seriously eat that stirfry everday too – especially with that chilled glass of lovely white wine! Sounds like a great day Liz – I totally know the feeling of wanting to ‘power through’. Enjoy!

I love throwing everything in my fridge ia stir fry and it somehow always turns out great.
Stir fry is probably the best “I have no idea what to cook!” meal ever. Just grab any veggies in the fridge, and go! But if I actually plan it out? I have a major soft spot for stir fry with pineapple in it. Something about that hint of sweet in with the salty and veggies is just perfect.
Well this just might be my favorite stir fry combination! I love that you have so many different types of vegetables. I never know what to put in and end up only using one or two things.
It’s a great way to use up a bunch of produce that’s on the verge of expiration!
I hardly ever eat stir-fry but this sounds delicious!

Haha I’m not good at sitting still that long, but since Eric drove the whole way, I just fidgeted around in the passenger seat, haha

Ohhh YES! I do too!!!! Peanut butter, some soy sauce, and spices and I’m good to go!
I love stir-fries, anything with a ton of veggies and a killer sauce!
It’s great to hear you arrived safely! My family are big road trip people so I have driven to florida several times which is a two day drive around 9 hours each day from where I live. So I can totally sympathize about your long drive on Saturday! That stirfry is so nicely plated. I always just dump it on a plate and call it done
Stir fry is always a good option! I love adding baby corn to mine!
I love baby corn! I can’t find it anywhere except in the frozen asian vegetable mixes. Do they sell it fresh??
