Maybe it’s the sunshine…
But I’ve been in an [extra] happy mood this week. Maybe it’s because it started off with good wine and great friends?
We had an informal [VAis4bloggers] meet up at Secco Wine Bar in Carytown, so I enjoyed some wine with Stephanie, Gabby, Adrienne, Megan, Lauren, and Lindsey.
Secco has “flight night” on Monday nights, so I got three classes of (white) wine for $10. Not a bad deal. This might need to be a Monday night tradition…
Perfect start to the week.
Anyways, my eats have been a little random, because I’ve been running from one activity to the next. But this is what I have been enjoying this week!
Breakfast
I’m still enjoy 0% chobani greek yogurt + blueberries in the morning, but yesterday, I also had a granny smith apple, with a side of PB2.
Lunch
It was my brother’s birthday on Monday, so he and I grabbed lunch together on Tuesday for a little celebration. Chipotle might not be glamourous but we both enjoyed our burrito bols. He got a veggie bol too, but his had cheese and sour cream. Blehhh.
So delicious. Burrito perfection.
Dinner
Eric has me hooked on fried rice. I feel like I’m craving it all the time. So when he texted me asking if I wanted to come over for some veggie fried rice… of course I said yes.
I brought a super simple salad, with some Annie’s Green Goddess dressing. It was my first time trying this dressing and I actually didn’t love it… maybe it’ll grow on me? Not sure, but the fried rice was so freakin delicious. Eric, I could eat this every night. Mmk?

i used to love fried rice when I was little, but I havent had it recently since I know how bad it is for you. I really should try to make it homemade, I bet it tastes better too!
I’ve been making it with quinoa, and using soy sauce to replace the oil for frying! I’ll hopefully be posting a recipe soon, because mine is way lower in calories than most fried rice!
Good wine makes a week great, that’s for sure! I’ve been enjoying white wine for a chance bc it’s so dang hot here!
Can’t go wrong with a good glass of wine! Although, I’m particularly loving my plan for after-work pina coladas. Summer comes with so many good things

We had veggie fried rice for dinner last night.
Starting the week off with wine, win!! I unfortunately have none. I had a bottle of sweet red in the fridge last night that I wated so bad. Well the bottle must have had a crack in it because when I sat it on my counter a chunk of glass flew out the bottle and the wine ended up all over the counter and floor
The fried rice looks so good, I love fried rice! Now I am craving it, lol!!

I love love love fried rice too, but I’ve never been able to make it successfully on my own. And that burrito bowl looks so good! I’ve never eaten at Chipolte, but every time I pass one I think about how much I want to try it.
Not gonna lie…that PB2 is AMAZING….have you tried the chocolate version too?

I have tried the chocolate version! I didn’t like it quite as much as the regular peanut butter, but it was pretty delicious!
I haven’t tried the chocolate…I want to find someone who likes it first! LOL Maybe the kids would eat it?
