What I Ate [inside] Wednesday
Richmond got some snow on Monday, so I worked from home. (I’m sure the problem would have been traffic, not really snow, but since schools were closed, I played it safe!)
Since I was actually at home all day, with my camera around, I was able to really document my eats, without having to use my iphone… so that was nice.
Breakfast
Still the standard yogurt bowl: chobani 0% + stevia + mixed berries + bear naked fit granola
I ate breakfast a little later than normal, so I didn’t have a morning snack.
Lunch
For lunch, I warmed up a leftover bowl of my vegan potato soup. The leftovers were just as delicious as the first time, and I had it with a salad + Trader Joe’s Low Fat Peppercorn Ranch Dressing, and a few Guiltless Gourmet Tortilla Chips. Super satisfying lunch!
I wish I had access to my kitchen every day at lunch!
Afternoon snack
I can’t really be trusted around these… so I don’t buy them often. But they were on sale…
I also had a mini vegan mocha muffin, which I had leftover from the batch I took to Sarah’s brunch. Yumm. (They’re made with whole wheat flour and chickpea flour, so they’re packed with fiber!)
Dinner
Since I already blogged about Monday’s pizza adventure, I’ll show you what I ate on Tuesday!
Hummus wrap and a side salad from Xtra’s Cafe, enjoyed with wine, and the company of Brittany, Stephanie, and Megan. Could a Tuesday night get much better? I think not.
Gosh, that wrap looks delicious! And I love when my nails or sportsbra or shirt match my gear 🙂

Wheat Thins are so dangerous. They really do have crack in them! So salty and satisfying…
I’m sporting a similarly purple pedicure, and have a purple yoga mat, too. I love looking down at my matchy-matchy during class and feeling a little proud, as un-yogi as that is 🙂

Hey Laura! Unfortunately, I don’t think they would taste very good 🙁 Chickpea flour doesn’t really have a “neutral” flavor, so I think it might make the muffins taste a little funky. You could definitely try it (maybe in a smaller quantity?) but you might want to try subbing something like coconut flour or rice flour for the regular flour. Let me know if you try it, and I’ll keep thinking! I have a lot of GF friends, so it would be great to find a way to make these without wheat!
