[The Coolest Thing] I Ate Wednesday

Before I show you the coolest thing I ate today, let’s review the basics…


Standard yogurt bowl: 1 cup Chobani 0% plain yogurt, 1 cup blueberries, 1/4 cup bear naked granola


Salad with lettuce, granny smith apples, cranberries, almonds, tomatoes, and a raspberry vinaigrette dressing


I was craving something Italian, but I didn’t want to have to go to the store for pasta, because pasta would have ended up being $30 worth of groceries. I can’t buy just one thing. So I had to work with what I had. This turned out to be delicious AND easy.

Easy Italian Bake

  •    1 yellow squash
  •    1 zucchini
  •    1/2 cup pizza sauce or marinara sauce (I used TJ’s pizza sauce)
  •    3 tbsp nutritional yeast
  •    1/4 cup mozzarella (optional)
  • spices: red pepper flakes, garlic, salt, oregano, anything else you desire
Chop up your squash and zucchini, and place it on a large sheet of foil. Top with the marinara sauce, nutritional yeast and spices. Then fold up the foil, and bake it at 350 degrees for 30-40 minutes (depending on how small you cut up the veggies, it may need a bit longer). I added my cheese after about 15 minutes, but you could leave it out to make this vegan.
Open up and dump into a bowl! It’s delicious and super healthy!

And now, the coolest thing I ate…

My awesome brother and sister-in-law got me the coolest birthday present ever.

The Zoku makes popsicles in SIX minutes. You keep the base in the freezer, pour in different liquids/juices/yogurts/etc and then you use this special tool to pop them out after they sit for 6 minutes. That’s right, it’s like instant popsicles! MAGIC!
Clearly, we needed to test this out. I decided to do a test run with orange juice. Didn’t want to get too fancy on the first try.
I filled the three slots with juice, with the sticks. Then I used the special handle to lift out the sticks.
And in minutes, I had a popsicle! This takes instant gratification to a whole new level.

  21. I’ve seen those Zoku popsicle makers around and I want oneeeee! My mom always used to make homemade popsicles for me when I was little, but I’d be in agony waiting for them to freeze. 6 minutes would be amazing! And I definitely suggest making fudgsicles of creamsicles next 😀

  26. I’m definitely trying that Italian bake! If only I could find nutritional yeast around here. You should make a creamy layered popsicle with fruit and greek yogurt for the creamy part. 🙂

  29. so. stinking. jealous. of the popsicles. I saw those are brookstone! I am a popsicle LOVER. Here are two I have tried.

    Blend blueberries in a blender, squirt in a little lemon juice.
    Blend your fav vanilla yogurt in the blender, squirt in some lemon juice.
    Layer the yogurt and blueberries and then freeze.

    Then, i did the same with strawberries. IT IS SO GOOD!!!!

  40. I’ve been thinking I need a popsicle mould for ages, although I think its getting too late for them here in the UK, out weather is so cold! I would make chocolate coconut popsicles!

  41. I love the instant popsicle maker! When I was a kid, I used to get soooo impatient waiting for home-made popsicles to be ready (same with jello lol)… the zoku would’ve been a game changer 😉

  52. I WANT A ZOKU. You are the first person to actually explain what a Zoku is. Before, I just heard the word a lot. I never knew what it was, but I knew that popsicles were made … somehow.
    Now I want a popsicle.

    One of my favorites is cherry greek yogurt + unswt dark chocolate cocoa powder + splash of milk! Chocolate cherry treat!

  55. Mmmmm I love homemade popsicles! Even before I started baking/cooking regularly, I was in the kitchen making popsicles with my mom and grandmother to stay cool for the summer. I saw a great recipe for coconut chai popsicles on Food Doodles a few days ago. It sounds yummy!
