Before I show you the coolest thing I ate today, let’s review the basics…
Standard yogurt bowl: 1 cup Chobani 0% plain yogurt, 1 cup blueberries, 1/4 cup bear naked granola
Salad with lettuce, granny smith apples, cranberries, almonds, tomatoes, and a raspberry vinaigrette dressing
I was craving something Italian, but I didn’t want to have to go to the store for pasta, because pasta would have ended up being $30 worth of groceries. I can’t buy just one thing. So I had to work with what I had. This turned out to be delicious AND easy.
Easy Italian Bake
- 1 yellow squash
- 1 zucchini
- 1/2 cup pizza sauce or marinara sauce (I used TJ’s pizza sauce)
- 3 tbsp nutritional yeast
- 1/4 cup mozzarella (optional)
- spices: red pepper flakes, garlic, salt, oregano, anything else you desire
And now, the coolest thing I ate…
