Hi guys! My name is Kat and I blog over at Keep’n The Faith. My blog focuses on my journey to becoming the healthiest me I can, while hopefully inspiring others to do the same
During my journey I have discovered my love for quinoa. Quinoa has such amazing benefits, and is such a great source of protein, that I try to consume it as much as I can. I enjoy it regularly as a hot cereal or as a salad, but my favorite use for it is in baking!
Cranberry Quinoa Muffins
1 C cooked quinoa
1/4 C applesauce
2 C whole wheat flour
1/2 C honey
1 tsp salt
3/4 C almond milk
1/2 C dried cranberries
1 flax egg (1 T flax mixed with 3T water)
1 tsp vanilla
1 1/2 tsp baking powder
1 tsp cinnamon
2 T sunflower seeds
Preheat oven to 350. Whisk flour, quinoa, salt, baking powder, cinnamon and cranberries together. In another bowl, whisk applesauce, honey, milk, vanilla and the flax egg. Add wet ingredients to the dry and mix well. Pour into muffin tins and top with sunflower seeds. Bake for 25 minutes.
Another one of my favorite ways to sneak in this nutritious food is by adding it to pancakes!
1/2 C cooked quinoa
3/4 C whole wheat flour
2 tsp baking powder
2 egg whites
1/4 C almond milk
1/2 tsp vanilla
1 tsp cinnamon
Mix everything together. Scoop out 1/4 C at a time and cook in a pan. Make sure to pat them down since they will be a bit fluffed up! Top with your favorite pancake toppings!
