I go through food phases. I find something I like and I eat it for weeks until I’m sick of it, and then I forget about it. And then I find it again. It’s my food cycle.

How did I forget about spaghetti squash?!

Don’t get me wrong. I love spaghetti. Pasta dishes rock my world! They’re so delicious. But, in case it wasn’t already clear, I love love love vegetables. So I’m always looking for ways to sneak in more veggies into my day!

Have you tried spaghetti squash before? If not, you don’t know what you’re missing! It looks a little intimidating at first, but it’s pretty easy to fix. I just:

-slice it in half, length wise
-scoop out the seeds
-flip it onto a plate with a little water
-cover with plastic wrap
-microwave for 10-15 minutes depending on how big it is

It’s pretty simple! Then you just scoop out the insides with a fork. It breaks apart into little strands, like, well, spaghetti!

I topped this bad boy with TJ’s marinara sauce, and some nutritional yeast.

YUM!!! Yes, that’s a massive plate of spaghetti squash. And yes I ate the whole thing.

 

Are you a spaghetti squash fan? I can’t decide which I like better, spaghetti squash, or butternut squash...

The last couple of days have been extra crazy because I’m moving tomorrow! I know I mentioned it before, but tomorrow is the actual move day! I’m pretty excited. My two future roomies are super cool. So wish me luck with packing!
