Hungry Hump Day

Hey friends!

Happy hump day! I feel like this week is flying by. I’ve been out every night, and trying to pack up boxes in the bits of free time I’m picking up here and there. But no complaints here. It’s been a fun week!

Since it’s Wednesday, you get the pleasure of seeing a day in the life of my eats.

My day of eats:

Breakfast: A bowl of Chobani yogurt, topped with blueberries and Bear Naked Granola.

Carrot ginger soup! This was a pretty delicious creation of the cafeteria lady. I’m not exactly sure what’s in it, but they posted the nutritional info, and it was pretty solid! Does anyone have a recipe for something similar?

Dinner is an old picture, because it’s an old recipe! This was the result of my Quinoa Experiment and I’ve been making it pretty consistently ever since!

No night time snack pictured, because I’ve been sticking to my no-snacking after 8pm goal. Granted, the goal has been easy to stick to since I haven’t been home in the evenings. (Let’s ignore the ~16 diet cokes I consumed at the bar…whoops.)

I’ve been playing around with wheat bran, but so far, I haven’t come up with any good recipes. I tried making crackers with it yesterday, and they came out pretty terrible. I’ll definitely have to do some more kitchen experimenting, before I post any recipes. Stay tuned!

  1. The best thing I’ve had for dinner this week would have to be shrimp and grits! First time I tried it and I loved them!

  2. I agree Fujis are the best type of apple. Although, Honey Crisp is a close second and would probably be first if they weren’t so pricey!

    • Hahaha no don’t worry! There was more food, I should have mentioned what I didn’t take a picture of! There was a big salad with the soup, and a vitatop after the quinoa! There was also a lot of unpictured coffee ๐Ÿ˜‰

  4. I’ve not made carrot ginger soup, but Kath from “My Funny Little Life” posted a recipe once that I intend to make some day!

  5. I follow the same rule of no eating past 8p and it really keeps me “honest” (for lack of a better word).

  6. That yogurt looks awesome and so does the soup! Yummy! Chobani yogurt is the best. I love the kind with the pomegranites on the bottom. So good!

  8. I just started doing Jenn’s WIAW today, so much fun ๐Ÿ˜€ I love that chobani with granola. I recently bought the chocolate Bear Naked and I am in love. It’s so awesome! I’ve recently been eating chicken with squash and sweet tatter for dinner. Nothing exciting lol

  10. omg. quinoa is my favorite grain EVA!!!! i am obsessed with it.

    here’s a link to one of my favorite dishes.

    i also do one, that’s chopped red bell pepper, jalepenos, red onion, mango, and black beans with a splash of olive oil and red wine vinegar. holy lord, it’s delish. i keep everything raw and put the warm quinoa over it… mmmmm. i’m hungry now ๐Ÿ™‚

  12. This looks like such a great day of eats, Liz! Especially that tasty quinoa salad ๐Ÿ™‚ The best dinner I’ve had this week was a new Barbeque Hoppin’ John recipe we made from a vegan soul food cookbook…YUM!

    I’ve been experimenting with ground flax lately…I’ve always used it but now I’m putting it in dishes that I would ordinarily not…Dinner dishes and such!

  16. I’ve recently discovered persimmon fruit, kabocha squash and chia seeds. I love them all!

    • Oh my gosh I had my first persimmon a few months ago and I thought it was SO good! But I have no idea how to describe it to anyone else! Haha. Chia seeds rock too ๐Ÿ™‚

  18. I’ve still been experiencing with chickpea flour – I started out by just making socca, but now I’m using it in other things as well! ๐Ÿ™‚

    • Ohh I have a recipe I LOVE for vegan mocha muffins and it uses chickpea flour! I’ve also used it for homemade crackers! I think both of those are on my recipe page ๐Ÿ™‚

    I don’t think I have ever used the phrase “Hump Day” because it makes me think naughty things.
    I wish I could cook so I wasn’t so hungry all the time.

    P.S. I’m totally OCD about my hair straightener, too. I have a recurring dream that I burn down the house because I left it on. Or because Mr. A forgot to unplug the Christmas tree.

  22. I’ve been trying to use coconut oil instead of butter or olive oil lately. It’s new to me so I am still deciding if I like it or not and if it’s actually healthier.
