Hopefully you all saw my homemade crackers! As I mentioned, it only cost about $.75 cents for all those crackers. Way cheaper than a box and much better for you! (No preservatives, HFCS, etc.)
So I started wondering, what else could I make myself? I know lots of people make their own almond milk, but for some reason, it scared me. I imagined I’d end up some some watery liquid punctuated with chunks of soggy almonds. Blech. But wait… why not try it?
The cool thing about this is, you can play around with how creamy you want it. I don’t like mine super creamy, so I used less almonds. Here’s what I ended up doing:
Homemade Almond Milk
- 1/3 cup almonds
- 3 cups water
- 1-2 packets of stevia (you might want more, I didn’t want mine very sweet)
I threw the almonds and water in the Vitamix, and blended on high for about a minute. Then I added in some stevia and blended some more. This was too easy! If you have a Vitamix, or a good food processor, you should totally try this. After it was blended, I played around with filtering it. I didn’t have cheesecloth (because who does?!) so I actually ran it through a coffee filter. This was a slow process but it really did filter out the gritty bits. Honestly, I didn’t mind the tiny almond pieces, so I left them in. I just played with the filter for fun. (Because for some reason, I find things like this to be fun.)
The hardest part was figuring out where to store my almond milk! I put half of it into an ice cube tray and the other half into an old kombucha bottle I froze it in an ice cube tray to make some Banana Soft Serve and it worked perfectly! I’m so excited, I don’t need to buy soymilk/almond milk anymore!! So instead of paying $2.99 for a half gallon of almond milk, I can make half a gallon for ~$.50. Seriously, how cool is that?!
I’ve also been snacking on some tasty things. I made Kale Chips yesterday! Or Salad Chips, as my BFF refers to them
Warning: These chips will cause strange looks from your coworkers “What are you eating?!” “Kale chips!”
It’s also worth noting, you can buy Kale chips in the store… for $8… or you can make your own… for about $.80! Just tear up some kale, spritz with olive oil, add some salt, and bake at 350 for about 10 minutes! Easy, my friends.
