Vegan Thai Tomato Soup!

So I’m ashamed to say, I’ve never really had Thai food. However, I recently had Thai tomato soup at work, and it was delicious. So of course, I had to figure out how to make it. I adapted this recipe from Cooking Light, with a few tweaks 🙂 Here’s what I did:

vegan soup

Vegan Thai Tomato Soup

  • 1 small onions, chopped
  • 1 clove minced garlic
  • 1/4 tsp ginger powder
  • 1 28 oz can tomatoes, diced
  • 1 1/2 cups water
  • 1/3 cup light coconut milk
  • 2 packets stevia
  • 1/4 tsp crushed red pepper
  • 1/4 tsp salt
  • 1/4 tsp Tabasco sauce
  • 1/2 tsp lime juice

Saute the onions on med high heat. (I didn’t really use any oil, I just sprayed the pan with cooking spray.) Cook until the onions are tender, then add garlic and ginger. I burned my onions a bit, but they still tasted good. 🙂 Then add them to a pot with the tomatoes & water, and bring to a boil. Once it’s boiling, add the coconut milk, stevia and spices, and let simmer for 10-15 minutes. It’s delicious and a big cup of it only has ~80 calories.

Vegan Thai Tomato soup

I ate mine with some salad topped with 2tbsp of hummus, thinned with 1 tbsp of coconut milk. Oh and I added a few crushed pretzels on top. Yummy!
