Foods I’ve Missed…

Now that I’m incorporating dairy back into my diet, I have to admit, there were a few foods I missed! Cheese & Yogurt. While I was able to find a decent substitute for yogurt, soy cheese just didn’t cut it. So on my first day back with dairy, my friend and I went to Stuzzi, a local pizza place here in Richmond. Check out this amazing pizza, with homemade mozzarella!

My friend is also a vegetarian, so he and I split a delicious veggie pizza. It was topped with artichokes, spinach, mushrooms, and eggplant. SO good! What do you like on your pizza?

Over the weekend, I went to Bakers Crust and enjoyed a Panini. I forgot how much I love paninis!

To recreate this amazing panini at home, follow this recipe:

Spinach & Mozzarella Panini

  • 2 slices sourdough bread
  • 1 tbsp pesto (I like this one)
  • 1/2 cup spinach
  • 1 slice mozzarella cheese
  • 2 slices tomato
  • olive oil
  • basil (optional)

Lightly coat the bread with olive oil, and spread the inside with pesto. Add in the spinach, basil, cheese and tomato, and put toast either in a george foreman grill, a panini press, or even just a skillet.

Does anyone have any other panini recipes? I feel like the possibilities are endless! I can’t wait to make some variations of this. 🙂

  3. I like sautéeing mushrooms with a bit of earth balance and red wine and throwing those onto pizza with a little bit of olive tapenade and roasted fennel . So rich, so satisfyingly delicious without cheese or meat! <3

    Your pizza looks wonderful! My favorite toppings are tomato slices, spinach, fresh garlic, smoked gouda, and caramelized onions. I love paninis with pesto, tomato slices, and mozzarella.

  8. Cheddar, avocado, onion and tomato grilled on sourdough in the press is excellent.

  9. Spinach and mushrooms are almost always a MUST on my pizza- especially when I make it at home. Fantastic.

    And I think it would be hard to give up cheese. Could NOT do it…

    I really like paninis with balsamic marinated mushroom caps, arugula, herbed goat cheese, tomato, whole grain bread, and sun-dried tomato pesto (or regular pesto).

  13. I’m so loving pizza lately…I mean I never didn’t love it, but I feel like I could eat it 10x’s a day lately!

    Cheese doesn’t always agree with me, but I ignore it 😉

  14. i do miss a good ole “normal” pizza! but, for this gluten/dairy/egg/corn/casein intolerant girl, a “regular” pizza will never again cross my lips.
    i’m confident i’ll find something comparable, with all the diverse options now. but, yeah, like you said, soy cheese just does NOT cut it on pizza!

    • Have you tried nutritional yeast on pizza?? I haven’t, and I have no idea if it would be good, but based on how tasty it is in mac n cheese, I’m wondering if it would work well! (This might be a dumb question, but is nutritional yeast gluten-free?)
