It’s True, I Heart Vegetables

Hey there friends. Maybe you found this page through my old blog, LizLivingVegan, or maybe you’re a random visitor, so…

For those of you that kept up with LizLivingVegan, you know all about my “vegan experiment”. I went vegan for 6 months, to try to lower my cholesterol. Well, sadly, it didn’t make much of a difference. Thanks to genetics, it’s Dad, not Dairy that really effects my cholesterol. However, I’ve been a vegetarian for years, and some things never change! I decided to start a new blog, since I’m not really “living vegan” anymore, and I didn’t want to confuse people too much πŸ˜‰

For those of you that just magically wandered to the site, I’m glad you came, and I hope you come back!

I chose this name because I do, indeed, love vegetables.

I’m looking forward to testing, trying, tasting, creating, botching, and attempting new vegetarian recipes. I hope you’ll follow along πŸ™‚

  2. I’m sorry your experiment didn’t work, but at least you go to try a lot of new things. My favorite vegetarian meal right now is tofu stir-fry, especially when you scramble an egg and add that to it. Yum. Or shepherd’s pie

    my vegetarian recipes are so simplistic that they can’t really even be called recipes!
    what can i say, i like things simple πŸ™‚

    my favorite easy veggie meals:
    1-roasted veggies: throw all your sliced favorite veggies in a roasting pan and drizzle with olive oil and salt.
    my fave combo is: brussel sprouts, potatoes, onions, garlic, broccoli, asparagus, mushrooms, squash, parsnip, and carrots.
    roast/bake for 40 minutes at 350 degrees.

    2-another favorite is just a big ole baked potato topped with salsa and avocado or a sweet potato with peanut butter and cinnamon.

    3-rice and beans mixed with broccoli

  5. Right now Im completely obsessed with butternut squash and apple soup. Its super easy, you just need a squash, an apple, some broth and garlic. Then you just blend it all together and play with herbs until its what you want. Pretty sure I’ve had it once a week for the last 2 months. πŸ™‚

    I love making raw ice cream with cashews. And zucchini lasagna!

  8. Sorry diet didn’t work. Unfortunately, genetics can be a real stinker! Lately, I have really been in to chili! I have been putting in tacos, on baked oven fries, salads…everything! You can get my recipes here

  9. Looking forward to following your new blog! I love love love roasted veggies, particularly roasted broccoli. My “everyday” version is just olive oil, salt and pepper, but my “fancy” version includes garlic, chili pepper flakes and lemon zest then tossed with more olive oil, lemon juice and parmesan cheese once it’s out of the oven. It’s sooo good, it’s all I want for dinner πŸ™‚
